Adobo is a dish made with a simple mixture of soy sauce, vinegar, garlic, bay leaves, and black pepper spices where meat is added and is braised. The mixture is then absorbed by the meat, making it tasty.

The Philippines is a country that has a warm climate and Filipinos were trying to find means of preserving food longer. Adobo has both the properties of vinegar and salt in the soy sauce that helps in keeping the food from being spoiled easily.

The name ‘Adobo’ was given to this dish when the Spaniards saw it in their invasion in the Philipines, adobo or adobar means marinate in Spanish, which is a trait of this dish.
