Perhaps many foreigners would find this particular Filipino dish strange. This is mainly because it’s a stew made with pork meat that’s cooked in pig’s blood. Yes, you read that right – it’s really cooked in pig’s blood. It is, however, strangely flavorful when mixed with vinegar and other spices. Pork offal (lungs, kidneys, intestines, ears, heart and, snout) is used and siling haba (chili) is added. Dinuguan is also called “chocolate meat” and is typically served with puto.
